From Russia, with love

"To give caviar is to honor the recipient. To serve caviar is to honor the guest." That's the adage of Gourmet Boutique in the Westin Copley which opened Dec 7 and has the market on caviar in the area from the United States, the Soviet Union and Iran. But don't fret if the diners on your V-Day gift list don't like it, although the buzz is starting that Gourmet Boutique has the best selection in the city. The shop specializes in European delicacies from all over the globe, like smoked meats and fish from Sweden, France and Norway; artisan chocolates from Belgium (the best!), Austria, Germany and America; foie gras, pates, terrines and mousses, and a full line of "Balgin" Turkish Delights, imported from producers in Turkey. The list is seriously endless. You'll just have to check it out, because if your loved one has the propensity for the finer things in life, this store is very you.

Next to the covered walkway on the Westin Hotel lobby side of Copley Place is an enticing new space -- all 300 square feet of it -- with a copper-roofed overhang and a tempting sign in chocolate-brown and gold that reads "Gourmet Boutique."

Inside, caviar of all grades, from flying fish roe ($12.99 for 3.5 oz.) to beluga 000 ($199.99 for 2 oz.), is displayed in a well-stocked glass case. This delicacy inspired owner Anya Zelfond to open the business this winter. "I'm Russian, and we really do like caviar," says Zelfond, who immigrated to the US with her family 13 years ago, when she was 11. "I had a vision of a small caviar house like they have in Europe. I wanted a little European gourmet boutique in the center of Boston."

More than one fish egg in the sea
When Anya Zelfond was growing up in Moscow, caviar was no big whoop. ''I'm embarrassed to say this, but every week we had it," she says. ''We just got the tins, and they hung out in the refrigerator."

Then and there, caviar wasn't such a luxury, particularly for Russians. Here and now, a dozen years later and across the Atlantic, the 25-year-old Zelfond sees caviar from a different perspective, as proprietor of a tiny year-old shop in Boston that sells beluga sturgeon eggs for $140 an ounce.

Now that rampant overfishing, pollution, and poaching have pushed the ancient beluga to the edge of extinction, the United States has banned imports of Caspian and Black Sea beluga caviar, sending prices leaping as supply dwindles. It's legal to sell anything that was imported before the bans went into effect in the fall, and Zelfond's Gourmet Boutique in the Westin Copley Plaza still has some in stock. But it won't last much longer than New Year's -- high season for caviar lovers.
