The future of the prehistoric sturgeons and the coveted delicacy they produce lies in aqua-farming. There are many wonderful farms both in the USA and abroad that have dedicated the past several years to farming this wild prehistoric fish in huge aquariums to insure that this mammoth fish will be around for many generations to come. The careful balance between science and family care yields some of the finest caviar our experienced taste buds had the pleasure of sampling. And although we will still see Caspian caviars on the market we encourage our clients to sample some of the wonderful offerings coming from sturgeon farms around the world.
